 As France is renowned for its cuisine Provence and the Vaucluse are no exception. 

Provencal cuisine ..... 

....conjures up thoughts of sun drenched lavender fields, Herbs de Provence, garic, olives, olive oil, pesto, truffles, vine spring ripened tomatoes and aubergines, lemons, chevre cheese,  spring lamb - fresh, fresh seafood - and who can forget Bouillabaisse!   
Rightfully earning the name, “la cuisine du soleil"




 


 

Some of the traditionally Provancal items you may see on menus:


Bouillabaisse:
  Hearty saffron based Seafood Stew, served as a main course – usually a special meal. 
Marseilles is the home of this dish where the “Vieux Porte” is lined with many restaurants featuring this specialty.


Soupe de Poissons:  Hearty Mediterranean fish soup, served with aioli (garlic mayonnaise), garlic, croutons and finely grated sharp cheese.


Daube Provencale:  Traditional Provencal stew, made with either beef, veal or lamb.  Perfumed with Herbs de Provence and orange zest,  and  cooked with a good amount of red wine.

Soupe au pistou:  The soup of Provence.  Perfumed with Basil and rich in flavor.


Ratatouille:  A vegetable mixture (usually tomatoes, eggplant aka. aubergines, bell peppers, onions and garlic, but sometimes including zucchini aka courgette).  Served hot  usually as an accompaniment to meat, or cold as a starter.


Tappenade:  Olive puree served on toast or with raw vegetables with “aperitif”.


Anchoiade: Also for “aperitif” anchovy puree served in a similar manner to Tappenade. 


You will find restaurants offering everything from casual dining to a complete formal French lunch or dinner – Provencal style – Bien sur!  Sablet itself has excellent dining of both types and is fortunate to be surrounded by a number of other villages with restaurants of similar quality.  Further a field  (within  a 10 – 15 min drive), are many many more excellent choices in the towns of Vaison la Romaine, Carpentras, Orange and Chateauneuf du Pape.

From Flemish origin, the chef has his roots in
Provence now. He is now the best chef
of the region since 1996 in this ancient 12th century mill. The cuisine is resolutely sunny, like the country here.

 “We took advantage of your restaurant information and ate at Abeilles (‘our friends’…. went to cooking school there last Wednesday and really enjoyed it), Table du Comtat (our favorite), and Bateleur. We also enjoyed Le Mesclun (Seguret-young couple very attractive presentation and food), Hotel restaurant Colombet in Nyons (our friend - olive lover), and Les Copains d'Abords in Gigondas-Mistral the last two days and we tried to go to the L'Oustalet for lunch, but it was full inside. The owner of Copains is a character-fun.”
